So Jon & I made some delicious cookies tonight. They are one of my favorites, and a recipe by yours truly. Here is the recipe and some photos of the baking process! Enjoy!
MINT CHOCOLATE COOKIES RECIPE

1 cup unsalted butter, softened
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
3/4 cups unsweetened cocoa powder
1 teaspoon salt
1 2/3 mint chips
- Preheat oven to 350 degrees F (175 degrees C)
- In a large bowl, cream together the butter & sugar until smooth. Beat in eggs one at a time, then stir in the vanilla.
- Combine the flour, cocoa, baking soda and salt separately; stir into creamed mixture. Fold in the mint chips. Drop rounded tablespoons onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, until cookies are set. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
